Trout with Walnut Dressing

 4 fresh trout

5 tablespoons butter

4 cups wholewheat bread cubes

2 tablespoons chopped parsley

1 tablespoon fresh sage

1/3 cup chopped celery

1 grated carrot

1 onion chopped

2 cloves if garlic crushed

½ cup walnuts

1 egg

½ cup white dry wine

½ teaspoon cumin

salt to taste


Melt butter in a large sauce pan. When butter foams, add onion, celery, carrot, cumin and sage. Saute over medium heat until onions are golden. Add garlic and remove from heat. Mix in bread cubes and stir until coated with butter. Add walnuts, egg, and white wine. Stir till dressing begins to stick together. Add a little more wine if needed. Place the dressing in the cavity of each fish. Line the fish up on their backs in a shallow baking dish, dressing side up. Put in a hot oven at 375F or 190C and bake for 30 minutes.
