Baked Chicken with Sauerkraut

Pečené kuře se zelím

 Each year, in the fall, I make 15 kilo of sauerkraut. Sauerkraut is served with almost every meal in the Czech Republic.  Baked chicken is no exception.

 1 chicken cut into pieces

1 tablespoon lard

4 cups sauerkraut

1/2 cup beer

1 teaspoon cumin

8 allspice berries

2 cloves of garlic

Salt and pepper

A dash of nutmeg

 Melt lard in a large oven-proof pan with a lid. Brown the chicken on all sides. Remove chicken to a plate. Rinse the sauerkraut to remove the brine. Spread the sauerkraut over the bottom of the oven-proof pan. Add 1/2 cup of beer.  Place the chicken on top of the sauerkraut. Season the chicken with salt, pepper, cumin, allspice and nutmeg. Slice the garlic thinly and sprinkle over chicken. Cover the pan with a lid. Bake in hot oven at 350F (175C) for 1 to 1 ½ hour until chicken is done. Thicken the liquid in the pan with a little flour.  Serve with potato dumplings or boiled potatoes.
