Potato Cream Soup

I visited my dentist today. I had some dental work done and promised not to eat solid food until tomorrow. Hence, the preparation of cream soup.

Potato Cream Soup



Cream of Potato Soup


4 medium onions

2 tablespoon butter

6 medium potatoes

4 cups chicken broth

2 cups milk

1 cups light cream

salt and pepper to taste


Finely slice the onions, and lightly brown in butter. Add the potatoes, if you have new potatoes, fresh out of the garden, washed potatoes leaving the tender skins on cut them into small cubes. Add chicken broth and salt. Boil gently for 45 minutes to and hour. Puree soup in a food processor until smooth. Return to top of stove and add milk and cream. Season to taste and bring to a boil. Serve hot with finely chopped chives for garnish.
