Mincemeat Bars

As long as I can remember, mincemeat cookies have been a part of my Christmas celebration.  These bar cookies are easy to make and delicious to eat.

Mincemeat Bars

Crust:

2 ¼ cup (515 gr.) all-purpose flour

1/2 cup (230 gr.) sugar

¼ teaspoon salt

½ cup (225 gr.) soft butter

2 egg yolks

1 tablespoon milk

Sift flour, salt and sugar together. Blend in butter, add egg yolks and milk. Pat evenly into pan (15 x 10 x 1 inch). Bake in preheated oven at 350 degree Fahrenheit (180 C.) for 15 minutes.

Topping:

1 tablespoon soft butter

1 cup firmly packed brown sugar

2 egg whites

2 tablespoon molasses

2 cups sifted all-purpose flour

¼ teaspoon salt

½ teaspoon baking soda

1 teaspoon each of ground cinnamon and clove

¼ teaspoon nutmeg

4 tablespoon water

1 cup chopped walnuts

¼ cup seeded raisins

1 box (9 ounces) mincemeat crumbled up with fork

Mix butter, brown sugar, egg whites, molasses and water together. Add sifted dry ingredients; mix well until smooth. Add walnuts, raisins and mincemeat; mix until well incorporated. Spread over baked crust. Bake at 350 for 20 minutes. Cool and cut into 1 x 2 inch bars.
