Tortellini in Brodo
2 quarts chicken or beef broth
1 cup chopped carrots
1 cup chopped celery
1 cup green peas
1 medium onion, diced
1 bay leaf
1- 9 ounce (250gr.)package of cheese or meat tortellini
1 tablespoon butter
Salt and pepper
In a large pot melt butter and sautee onion until tender and transparent. Add remaining ingredients except the tortellini, bring to a boil then simmer for about an hour until tender. Add 1 package of tortellini. Continue cooking until tortellini float (about 5 to 10 minutes). Spoon tortellini into bowls with broth. Makes 4 to 6 servings

Ummm….I started the New Year with a cold! Sure wish I had a big bowl of that right now! Looks great!
