Vdolky s Makem – Czech Poppy Seed Buns

3 cups (650 gr.) all-purpose flour

2 eggs

5 tablespoons mayonnaise

½ teaspoon salt

1 packet yeast

3 tablespoon lard

2 tablespoon sugar

1 ½ cups (350 ml)warm milk

coarse salt

1/4 cup (60 gr.) poppy seeds

For egg mixture: 

1 egg mixed with 2 tablespoon milk

In a small pan warm the milk; add yeast, sugar, 2 tablespoons flour and a pinch of salt. Set aside until yeast begins to be active. Put flour in a large bowl. Hollow out the center add salt, eggs, mayonnaise and lard. Pour milk mixture over flour and mix with a wooden spoon until all is incorporated. Cover with a damp towel for 30 minutes. Stir mixture from bottom to top about 6 strokes, just enough to stretch the dough. Let dough rest for another 15 minutes and stir again. Cover and let rest for another 30 minutes. Pour out onto a lightly floured board. Fold dough over with hands just enough to bring sides to center. Don’t over work the dough. The dough should be wet and sticky. With a pastry cutter divide dough into bun size pieces. Dip fingers in flour then with fingers pull each corner of bun to center forming a round smooth surface. Brush with egg mixture, dip in poppy-seed and sprinkle with coarse salt. Arrange on sheet pan that has been well-greased or covered with baking paper. Allow enough space for bun to rise without touching. Let rest for 30 minutes before baking. Bake at 400 degree Fahrenheit (205 C.) for 30 to 40 minutes.
