Simple Fruitcake

You don’t have to get the mixer out to make this simple fruitcake.  Just stir it up with a fork.  You need to use two bowls, one for the wet ingredients and one for the dry.  I use a glass bowl for the wet ingredients so that I can melt the butter in the same bowl.  The recipe is as follows:

 
 
Simple Fruitcake
 
Combine together in glass bowl:
1 cup of fruit juice
1 beaten egg
1/4 cup of melted butter
one grated apple
1 cup candy fruit
1 cup raisins
1 cup nuts
 
In a second bowl mix together:
2 cups flour
1 cup sugar
2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
any spices that you like
 
Now dump the wet into the dry and mix together with a fork.
 
Put mixture into two loaf pans, lined with baking paper and bake for one hour at 350 degrees.
