Cherry and Apricot Galette

A galette is a French rustic pie.  Sweet galettes can be made with fruit or custard.  Salty galettes with cheese and vegetable.  The sky is the limit.  Here is a recipe to get your started.

Cherry and Apricot Galette


  • 1 ¼ cups sugar
  • 3 tablespoon flour
  • 1 tablespoon cornstarch
  • pinch of salt
  • 4 cups pitted fresh cherries and apricots
  • ½ teaspoon almond extract
  • Pie Pastry
  • 1 tablespoon butter


Mix together sugar, flour, cornstarch and salt. Toss in fruit and add extract. Roll out pie pastry and place into a casserole dish lined with paper. Pour in the fruit mixture and dot with butter. Bake in preheated moderate oven (350F) 175C for 30 minutes or until crust is well done.

Prep Time: 15 minutes

Cooking Time: 30 minutes

Yield: 10 servings
