Summer Salad with Fresh Plums

Plum Salad

A fresh plum salad with a dollop of cottage cheese makes a lovely cold lunch on a hot summer day.  While our garden is at its peak, we are enjoying fresh green salads.  It is so rewarding to go out to our vegetable patch and carry in the ingredients for a meal.

Summer Salad with Fresh Plums


1 cup fresh plums or prunes, pitted

1 cucumber

3 tomatoes, sliced

1 green onion, sliced

1 sweet red or green pepper

½ head of lettuce

A few leaves of fresh basil, torn into small pieces

extra virgin olive oil

Balsamic vinegar

salt and pepper


Slice plums through center and remove the stone. Peel and slice cucumber; thinly slice tomatoes, green onion and sweet pepper. Put all ingredients except for the lettuce in bowl; sprinkle with olive oil and vinegar, salt and pepper. Marinade for an hour before serving on a bed of lettuce.
