Bucatini with Zucchini, Peppers and Fresh tomatoes

 

1 package of Bucatini pasta

200 g Mortadella, cut into small cubes

3 tablespoons extra virgin olive oil

3 young zucchini, halved and sliced into thin wedges

1 sweet pepper, diced

3 ripe tomatoes, diced

2 cloves garlic, finely chopped

1 medium onion, diced

3 sprigs of fresh basil

a dash of white wine

100g grated parmigiano cheese

salt to taste

 

Set a large pot of salted water on the back of the range to boil for the pasta. When the water starts to boil add pasta and cook following package directions. Meanwhile, in a saucepan heat olive oil til hot. Add zucchini, peppers and onions to pan and saute till tender. Stir in the garlic, mortadella and basil cooking for 3 to five minutes.  Add a dash of white wine, and fresh diced tomatoes ; toss together with the other vegetables then take off heat. The tomatoes should be heated but not over cooked.  When the bucatini is ready, drain off water and toss into the sauce pan with vegetables, stirring to coat the pasta with oil. Serve with a spoon of grated parmigiano sprinkle on top.
